In monogastric animals, good-quality dietary protein is digested by host proteases and the digestion products, amino acids and small peptides, are absorbed by the host.

  • Protein bypassing the small intestine is no longer available for the host, but serves as a substrate for bacterial protein fermentation, also referred to as putrefaction
  • Putrefaction leads to production of metabolites specific to fermentation of proteins
  • In particular, metabolites from degradation of aromatic amino acids are known for their toxicity (indole, skatole, phenol, cresol)
  • Protein fermentation products are not only indicators of poor protein digestibility, but some are also toxic and carcinogenic to higher animals
